It’s in the heart of the Dôme’s superb rotunda, built in 1893, that Frédéric Chabbert, his wife Evangeline and their team welcome epicureans and connoisseurs of haute cuisine in a setting that’s both monumental and intimate, part of a Maison where sharing and discovery rhythm the daily routine in a gracious, warm and relaxed atmosphere.
Draped in apparent simplicity, our cuisine speaks clearly for itself, without any unnecessary artifice, confidently blending ancient and even sometimes forgotten know-how with modern techniques for a gastronomic experience that is as artisanal and accessible as it is sophisticated, today awarded a star in the Michelin Guide and a 16.5/20 rating in Gault & Millau.
Seasonality at the service of ingredient quality, like an adage within our card and menus which are, naturally, built around seasonal produce, at full maturity, for dishes with sharp tastes where balance of flavors and textures are king.
